CAULIFLOWER MAC & CHEESE
This easy, delicious, kid friendly comfort food is one of our go-to’s when we’ve had a loooooong ass day and want something we know the whole family will be happy with.
Ingredients:
1 x cauliflower
1 x cup of full fat milk (or oat milk if you want to keep it vegan)
1 x tablespoon of butter (or 2 x tablespoons of olive oil if you want to keep it vegan)
1 x tablespoon of garlic powder
1 x pinch of salt
1 x pinch of pepper
2.5 x cups of dried macaroni
2 x cups of grated cheddar cheese (or nutritional yeast if you want to keep it vegan)

Method:

Pre-heat the oven to 200 degrees.

Wash 1 full cauliflower, cut into chunks and put in a pan to boil.

Be sure to fill the water to just above the cauliflower so you can turn the cauliflower into a thick, soupy consistency in the pan itself using a potato masher.

Add half a cup of milk and the butter and keep stirring and turn to a low heat.

Add the salt, pepper and garlic powder to taste.

In a separate pan, cook the macaroni HALF WAY.

Add the cooked macaroni to the cauliflower sauce and stir for 3 minutes.

Add 1 cup of cheese to the macaroni and stir for 2 minutes.

Transfer the contents of the pan to an oven proof dish and add the other cup of cheese as layer over the top.

Bake for 5-7 minutes until the cheese is fully melted and golden.
