CHOCOLATE CHIP GRANOLA
Ingredients:
3 x cups of rolled oats
1.5 x cups of melted coconut oil
2 x tablespoons of cinnamon
1 x half cup of honey
1 x heaped tablespoon of date syrup
1 x cup of chopped nuts (I used almonds and Brazil nuts)
1 x half cup of seed mix
1 x cup of chocolate chips (we use Ombar buttons)
1 x teaspoon of sea salt (optional)

Method:

Pre-heat the oven to 160 degrees.

Combine all ingredients EXCEPT the chocolate chunks in a mixing bowl AND MIX WITH YOUR HANDS to ensure that the oats are evenly coated.

Place the mix into an oven-proof dish in a thin even layer and press down flat (so it looks like one very thin long bar). At this point you can sprinkle some sea salt over the top (optional).

Bake for 28 mins (but keep checking regularly to ensure that nothing is burning).

Carefully remove from oven and wait for it to cool.

Once cooled, break into chunks and place in an airtight container, regularly throwing in some chocolate chips.

If not consumed that very day, this should keep for around 2 weeks! That’s 2 weeks of some goooood snackin’.
