These egg and cheese pockets have been a quarantine saviour. Really, they have. They’re so quick & easy to make and they’re packed full of protein! They make for a super delicious super healthy treat and best of all they take under 2 minutes to prepare.


1 x tortilla wrap

1 x egg

1 x large handful of cheese

Seasonings or extras to taste (optional)


  1. Pre-heat the oven to 180 degrees.

  2. Take a piece of foil, roughly about the size of the tortilla wrap and lay your tortilla wrap on top of the foil.

  3. Create an outline of a circle of cheese around a 1.5 inch distance from the edge of the wrap (much like the picture in the link to this recipe on the previous page).

  4. Crack an egg inside the circle.

  5. Sprinkle on top your seasonings or extras (salt, pepper, garlic, basil leaves, chilli flakes, spinach etc.).

  6. Taking 2 opposite sides of the tortilla, bring the tortilla to a close and fold the remaining sides as if you were wrapping a present in wrapping paper (please see the picture below as a reference).

  7. Seal the pocket with the foil underneath.

  8. Bake in the oven for 25 minutes with the closure facing up (i.e.: DO NOT TURN THE POCKET OVER).

  9. Carefully remove from the oven, cut in half and enjoy! It will be very hot so proceed with caution!
